N: super classy old wood spice without any dark tannins in the way, the fruity caramel from inside a gourmet chocolate, golden plum
P: gorgeous fruit core of yellow plum and apricot with some sharper apple, cedary spice, sweet tobacco leaf, a bit of copper, modest rancio that doesn’t interfere with the rest of the profile

Spirits Attitude Cognac Grand Champagne 37 year 1987 (59.4%)
N: a sweeter and darker wood profile, some cocoa and cinnamon and even black peppercorn, mahogany. With water: a little fruitier, molasses, a hint of allspice
P: again sweeter and woodier, with a darker fruit profile too, red berries and super ripe peach, fairly hot and needs a few drops of water. With water: the dark wood clears up some and the fruit inches toward the orchard, along with some orange peel; aromatic allspice or fancy peppercorns. Pretty good length with wood polish
